Dinner with the Vacaros | November Edition

Happy Thanksgiving!

It’s that time of year again folks, a season filled with pumpkins, hot apple cider, and food on food on FOOD! On a more personal note, it is also time for Dinner with the Vacaros to make it’s debut!!! As you’ve probably already guessed, I have been SO EXCITED about sharing this event with you. ❤️ So sit back, grab a cup of tea, and enjoy!

The Vision

I married Matthew Vacaro last month, and if you know anything at all about our love story, you will remember that he could have wooed me solely with his cooking skills! Never have I ever met a man who loves cooking like he does, and he also KILLS IT EVERY TIME. So it came as no surprise that one of his first ideas was to start a monthly dinner tradition! He dreamed of having a few friends over once a month in order to utterly LAVISH a five course meal upon them. Of course I IMMEDIATELY signed on to the idea, and thus Dinner with the Vacaros was born. 😄

The Party

We didn’t wait long to kick off this tradition! November was the perfect time to get things rolling, and our siblings were eager to be the first ones to try it out. Matt prepped the primary courses, while I was in charge of the atmosphere, photographing the event and putting some kind of dessert on the table! Soon enough, the groceries were bought, the handmade invitations were sent off, and November 19th arrived before we could blink an eye. 🎉

Our guests arrived at 5:30 as instructed, along with their favorite bottle of wine (the only stipulation of attending the dinner 😉). Soon enough we were sipping away, laughing by the “fire” and trying our best to be patient as Matt prepared the first course! Before long we made our way to the table and the food festivities commenced. 🙌

The evening was filled to the brim with sweet fellowship, laughter, and plenty of oohing and aahing over Matt’s amazing food! Our hearts and stomachs were VERY full as we wrapped up the evening and officially deemed the first ever Dinner with the Vacaros a true SUCCESS. 😊

FIRST COURSE: A Fruit and Cheese Platter, with Brie, Gouda, and Herbal Goat Cheese

SECOND COURSE: An Iceberg Lettuce Wedge with Diced Jalapeños, Onions, and a Homemade Sour Cream Dressing. Garnished with Sliced Avocado

THIRD COURSE: Butternut Squash Bisque with Pancetta, Olive Oil, and Thyme

FOURTH COURSE: Marinated New York Strips with Sautéed Mushrooms, Steamed Asparagus, and Garlic-Rosemary Mashed Potatoes. Garnished with Thyme and Rosemary.

FIFTH COURSE: Butterscotch Bourbon Ice-cream with Roasted Chocolate Pecans

 AFTER DINNER: Hot Apple Cider with Cinnamon and Cloves
